The Fun Way To Achieve Success

HAPPY HOLIDAYS! How is your holiday season going?

I know it sounds counter-intuitive. Many of us think that we need to work hard to make the big bucks, but our clients don’t want to work with someone who is stressed, overwhelmed, and distracted. They want to work with someone who is present, a joy to work with, and an inspiration!

It’s time to make JOY a priority!

My goal for this month is to make joy a priority. I aim to spend more time with friends having fun, to read more books for pleasure, and to try some new fun recipes.

This month I am reading: Your Hidden Riches: Unleashing the Power of Ritual to Create A Life of Meaning and Purpose, Gabrielle Bernstein’s newest New York Times Best Selling Book, The Universe Has Your BackThe Miracle Man and lots of books on mythology. What are you reading?

Also I am experimenting with trying some new delicious recipes.

Here are some new tapioca recipes I have been enjoying with my family:

Traditional Tapioca Pudding Made with Almond Milk

Purchase small pearl tapioca (not the big)
Soak the tapioca (1/2 cup in 2 cups water) overnight (for at least 8 hours)

Next day:
Add 3 cups of unsweetened almond milk (I like Silk)
A pinch of sea salt
1/2 cup of sugar
2 beaten eggs
Together with drained tapioca

Put in medium saucepan over medium heat until thickened (about 15-20 minutes) Stirring constantly to avoid scorching. Once pearls are translucent and pudding is starting to become thick remove from burner.

Add 1/4 teaspoon vanilla.

Serve warm or chilled.

Add whipped cream if you like or serve as is. Plus add the intention of adding joy!

**If you are concerned about cholesterol, substitute three egg whites for the two eggs.

Chocolate Cherry Tapioca Pudding (Khristee’s invention)

Follow the same recipe as above but add a 1/2 cup of cherries (I used frozen cherries). I used a full cup but it took a lot longer to cook so try a 1/2 cup of cherries. Blend with some of the almond milk and stir into the mixture.

Add 2 tablespoons of melted dark chocolate. I used 70% dark chocolate; you may use any kind of chocolate you like. I pre-melted the chocolate and added it to the last 10 minutes.

You may need a few extra minutes of cooking since you have added more liquid with the cherries. So keep cooking until the mixture thickens. Estimated about 20 minutes.

**Stir constantly to avoid scorching and clumping!

Optional: You may add vanilla extract at the end after cooking.
Highly recommend topping with homemade whipped cream, cacao nibs, and almond slivers!
